                            Yorkshire Pudding

 100      Grams         Flour -- (1 cup)
   1      Pinch         Salt
   1                    Egg, Beaten
 300      Milliliters   Milk -- (10 ounces)
  25      Grams         Lard or Butter -- (1 ounce)

1)  Heat the oven to at least 200° C (400° F).

2)  Put the lard into a 9 inch pie plate and place the pie plate in the upper third of the oven.  Allow to heat at least 10 minutes before going on to step 3).

3)  Beat the egg in a large bowl until very frothy and well-beaten.

4)  Beat in the milk and continue beating.

5)  Add the flour and salt and beat at least two minutes (trying to incorporate as much air as possible into the mixture.  The mixture should be very bubbly.

6)  Pour the mixture into the hot fat a bake at least 40 minutes (until golden brown and well-risen).

7)  Serve immediately with meat and gravy.
