               Yellow Rice with Spices (Nasi Kuning Bumbu)

 450      Grams         Basmati Rice, rinsed and drained -- (1 pound)
   2      Tablespoons   Vegetable Oil
   1      Small         Onion, finely diced
   1      Teaspoon      Turmeric
   1      Teaspoon      Ground Coriander
     1/2  Teaspoon      Ground Cumin
     1/2  Teaspoon      Cinnamon
 550      Milliliters   Water, Boiling -- (19 ounces)
                        Salt to taste

1)  Put the rice in a bowl, cover it with water and soak for 2-3 hours.  Drain and set aside.

2)  Heat the oil in a heavy-bottomed pan and stir fry the onion until it is softened.

3)  Add the spices and salt, and saute for another minute.

4)  Stir the rice into the pan and saute for 2-3 minutes.

5)  Pour in the boiling water and cook over a moderate heat until the water is absorbed.

6)  Stir the rice with the handle end of a wooden spoon and cover the pot with a tightly fitting lid.  Reduce heat to very low and gently cook the rice for another 15 minutes.
