                              Welsh Rarebit

  25      Grams         Butter -- (1 ounce)
   1      Teaspoon      Prepared Mustard
     1/8  Teaspoon      Black Pepper
     1/4  Teaspoon      Salt
   2      Tablespoons   White Bread Crumbs
   1                    Egg Yolk
 125      Grams         Cheddar Cheese, Grated -- (4 1/2 ounces)
   3      Tablespoons   Beer
   3      Slices        Hot Buttered Toast
                        (A Dash of Wocestershire Sauce)

This mixture must never boil or it will go stringy!

1)  Melt the butter in a saucepan.

2)  Add the mustard, salt and pepper and breadcrumbs.  Stir over gentle heat.

3)  Add the egg yolk, mix well, then the cheese and stir to melt.

4)  Add the beer, mix well, and reheat.

5)  Spread on hot buttered toast or pour over the toast and brown it under the grill if preferred.
