                              Vegetable Soup

     1/4  Pound         Bacon
     1/2  Cup           Onion,Chopped
     3/4  Cup           Celery,Raw,Diced
   3      Large         Tomatoes,Sliced
     1/2  Cup           Carrot,Raw,Diced
   1      Tablespoon    Salt
     1/4  Teaspoon      Pepper,Black,Ground
     1/8  Teaspoon      Thyme,Dried
   1      Teaspoon      Sugar
   5      Cups          Water
   1      Cup           Corn,Frozen
   1      Cup           Green Beans,Frozen
   1      Tablespoon    Olive Oil
 400      Grams         Tomatoes,Canned -- (1 15-ounce can)

1)  Fry the bacon until crisp and set aside to cool on absorbent kitchen paper.

2)  Saute the onion, celery and tomatoes in the olive oil, stirring occasionally.  When tender, add the can of tomatoes, the water, salt, pepper, sugar, beans and carrots.

3)  Simmer over low heat for 30 minutes, uncovered.  Add the remaining ingredients and crumble the bacon into bits into the soup.

4)  Simmer at least 15 more minutes before serving.
