                     Vanilla Pudding

     1/4  Cup           Sugar
   2      Tablespoons   Cornstarch (Cornflour)
     1/8  Teaspoon      Salt
   2      Cups          Milk
   2                    Egg Yolks -- Slightly beaten
   2      Tablespoons   Butter (or margarine) -- Softened
   1      Teaspoon      Vanilla Extract

1)  Mix sugar, cornstarch and salt in a 2-quart saucepan.  Gradually stir in milk.

2)  Cook over medium heat, stirring constantly, until mixture thickens and boils.  Boil and stir for 1 minute.

3)  Stir at least half of the hot mixture into egg yolks, then stir the egg yolk mixture back into the hot mixture in the saucepan.

4)  Boil and stir for 1 minute, then remove from heat.  Stir in butter and vanilla.

5)  Pour into 4 dessert dishes and cool in refrigerator.

NOTES : If making special pie, decrease milk to 1 1/3 cups.

For Butterscotch Pudding:  Substitute 2/3 cup packed brown sugar for the granulated sugar and decrease vanilla to 1 teaspoon.
