                            Vanilla Ice Cream

   3                    Egg Yolks, Beaten
     1/2  Cup           Sugar
   1      Cup           Milk
     1/4  Teaspoon      Salt
   2      Cups          Whipping Cream,Chilled
   1      Tablespoon    Vanilla

1)  Mix the egg yolks, sugar, milk and salt in a 2-quart saucepan.  Cook over medium heat, stirring constantly, just until bubbles appear around the edge (don't boil!).  Refrigerate until the mixture becomes very cold (2 to 3 hours).

2)  Stir whipping cream and vanilla into the milk mixture.  Turn on the ice cream machine and pour the mixture slowly through the opening.  It should be ready in 20 to 40 minutes.
 

CHOCOLATE ICE CREAM:

Increase sugar to 1 cup and mix 2 squares (ounces) of unsweetened chocolate, melted, into the milk mixture before cooking.  Decrease vanilla to 1 tsp.
 

STRAWBERRY ICE CREAM:

Decrease vanilla to 1 tsp.  Mash 450 grams (16 ounces) of strawberries with 1/2 cup sugar and stir into the milk mixture after adding vanilla.
 

FROZEN STRAWBERRY ICE CREAM:

Decrease vanilla to 1 tsp.  Stir 450 grams (16 ounces) of frozen strawberry halves, thawed, into the milk mixture after adding vanilla.
