                               Turkey Soup

   1                    Turkey Carcass
     1/2  Cup           Stuffing or Stale Bread
   2      Quarts        Stock or Potato Water or Water
   1      Medium        Onion, Chopped
   2      Stalks        Celery & Leaves, Chopped
   1      Medium        Carrot, Peeled and Chopped
   2      Small         Zucchini, Chopped
   1      Teaspoon      Herbes de Provence
                        Thyme
                        Salt and Pepper
   1 1/2  Cups          Angel Hair Pasta or Miniature Noodles

1) Put the turkey bones into the stock, along with the stuffing (stale bread), the onions, the celery and celery leaves, the carrots and the herbes de Provence.  If necessary, add additional water to cover everything.  Simmer for at least 4 hours, topping up the water as needed to keep everything covered.

2)  About one hour before serving, remove the bones and add the chopped zucchini.

3)  About 10 minutes before serving, salt to taste and add some angel hair noodles.

4)  When then noodles are done, check the seasoning once again and add more salt if necessary and some freshly ground pepper if desired.

NOTES : Instead of a turkey carcass, use a piece of uncooked turkey drumstick.  Remove the skin at the same time that you remove the bone and chop the meat into bite-sized pieces.
