                            Strawberry Sorbet

 300      Grams         Strawberries -- (11 ounces)
 100      Grams         Sugar -- (3 ounces)
 125      Milliliters   Water -- (4 1/2 ounces)

1)  Prepare sugar syrup - Mix the sugar with the water and simmer over low heat for two minutes.  Allow to cool to 20 degrees C. before using.

2)  Wash the strawberries and then puree them in a blender. Use a sieve to strain out the seeds, if desired.

3)  Add the strawberry puree to the syrup and mix well.

4)  Turn on the ice cream machine and pour the strawberry mixture through the hole in the top.  Sorbet should be ready in 25 to 35 minutes.
