                              Strawberry Jam

  Amount  Measure       Ingredient -- Preparation Method

   4      Cups          Crushed Strawberries
   2      Cups          Sugar
   1      Tablespoon    Lemon Juice

1)  Mix all ingredients in a saucepan.    Heat to boiling, stirring frequently.

2)  Boil, uncovered, stirring frequently, until mixture is translucent (18 to 20 minutes).

3)  Remove from heat.  Skim off the foam.  Pour into a clean 1 quart jar and refrigerate.  Use within one month.

NOTES : Use same quantities for sour cherry jam and apricot jam.
