                         Spicy Toasted Almond Dip

     1/2  Cup           Sliced Almonds
   2      Cloves        Garlic, Chopped
   1      Small         Tomato, Peeled, Seeded and Chopped
   1      Tablespoon    Red Wine Vinegar
     1/2  Teaspoon      Salt
     1/4  Teaspoon      Cayenne
     1/2  Cup           Extra-Virgin Olive Oil

1)  Preheat oven to 170° C (325° F).  Spread almonds in a single layer on a yelly-roll pan and bake 7 to 10 minutes, until lightly browned.  Let cool.

2)  In a food processor, combine toasted almonds, garlic, tomato, vinegar, salt and cayenne.  Puree until a coarse paste forms.  With machine on, slowly add oil in a thin stream.  Process until well blended.  Transfer to a bowl, cover and refrigerate at least 2 hours or as long as 2 days.

3)  Serve at room temperature.
