                          Spiced Cranberry Sauce

  12      Ounces        Cranberries,Fresh
     1/2  Cup           Honey
   3      Tablespoons   Brown Sugar,Packed -- or to taste
   2      3-Inch        Cinnamon Sticks
   6      Whole         Cloves
     1/4  Teaspoon      Nutmeg,Freshly Grated -- or to taste
     3/4  Cup           Water

1)  In a saucepan, combine the water, honey, brown sugar, cinnamon, cloves and nutmeg and stir over medium heat until the honey and sugar are melted.

2)  Add the cranberries and bring the mixture to a simmer.  Cover and simmer for 5 to 10 minutes, stirring occasionally, until the cranberries have burst and the mixture is thickened.

3)  Transfer the sauce to a bowl and let it cool.

4)  Serve at room temperature.

NOTES : Makes about 2 1/4 cups.  The sauce may be made 2 days in advance and kept covered and chilled.
