                         Shrimps in Coconut Cream

 500      Grams         Shrimp, Peeled -- (18 ounces)
   1      Can           Coconut Milk -- (1 16-ounce can)
   1                    Onion,Sliced
   4      Cloves        Garlic,Minced
                        Salt to taste
   4      Tablespoons   Vegetable Oil
     1/2  Teaspoon      Chili Paste (lemon flavoured)

1)  Heat the oil.  Saute the onion until nearly golden brown. Add the garlic and saute a few minutes more until onion is golden brown.

2)  Mix in the coconut milk and salt to taste.  Bring the mixture to a boil, then add the shrimps.

3)  Turn the heat to low and allow to simmer for 15 to 20 minutes, stirring occasionally, until the milk becomes creamy.

4)  Add the parsley and chili paste and cook for another 5 minutes.

Serving Ideas : Serve with plain Basmati Rice or chunks of white bread.

NOTES : 4 salmon steaks may be substituted for the shrimp.  Increase simmering time to 30 to 40 minutes without stirring.
