                   Shortbread for Strawberry Shortcake

   1 3/4  Cups          Flour,All-Purpose
   1      Teaspoon      Salt
   3      Teaspoons     Baking Powder,Double-Acting
   1      Tablespoon    Sugar
   6      Tablespoons   Butter,Chilled
     3/4  Cup           Milk
                        Milk or Melted Butter

1)  Sift together the flour, salt and baking powder.  Add the sugar and mix well.

2)  Cut the butter into the flour mixture.

3)  Make a well in the center of the flour and add the milk all at once.  Stir until the dough begins to leave the side of the bowl.

4)  Turn out onto a floured surface and knead gently and quickly about ten times.

5)  Divide the dough in half and roll one half out into a rectangle about 1/4 inch thick.  Place on an ungreased sheet and brush with melted butter.

6)  Roll out the other half to the same size and place on top of first half.  Brush top with melted butter or milk.

7)  Bake until lightly browned at 230° C (450° degrees F) for about 12 to 15 minutes.

8)  Divide into portions.  Split each portion and butter the top of the bottom and top of the top of each.  Fill with cut and sugared strawberries and whipped cream.  Top with the same.  Save out a few whole berries to decorate top layer of cream.
