                                Roast Pork

   1 1/2  Kilograms     Pork Joint (with bone) -- (3.3 pounds)
   1 1/2  Tablespoons   Salt and Pepper Mix
   3      Tablespoons   Corn Flour

1)  Wash and dry the joint with paper towels.

2)  Score the joint all over with a very sharp knife.

3)  Rub the joint all over with a mixture of salt and pepper.

4)  Insert a meat thermometer into the thickest part of the flesh, but don't touch the bone.  Set the joint on a rack in a roasting pan.

5)  Bake on bottom most level of the oven using hot air at 170° C (350° F) for approximately 35 minutes per pound (e.g. 1.5 kg takes approx. 105 mins.), but continue cooking until the thermometer reads 185° F.

6)  Transfer the meat to a serving dish and allow to stand in the oven (turned off!) while you make the gravy.

7)  Make the gravy:  Spoon off all but about 1 to 2 Tbsp. of the clear fat.  Put roasting pan on right side of the stove and turn on heat of the right burners to about 5.  Add 2-3 Tbsp. of corn flour to the pan and mix well.  Then add the water gradually to make the gravy, stirring carefully to avoid lumps.  Taste the gravy and add salt and pepper if necessary.  Let the gravy come to a boil and boil for at least 1 minute.  (Gravy can be transferred to a pan with a spout and boiled in that.)
