                                 Raita I

 300      Milliliters   Yogurt,Plain -- (11 ounces)
                        Salt
                        Black Pepper
   1                    Green or Red Chilli,Seeded & Chopped
   2      Sprigs        Coriander Leaves,Chopped
   2      Teaspoons     Ground Roasted Cumin Seeds
   1      Teaspoon      Chilli Powder
     1/2                Cucumber,Grated & Drained -- OR
 350      Grams         Aubergine,Sliced into 1/8 inch rounds -- (12 1/2 ounces)

1)  If using aubergines, heat some oil in a frying pan and fry the aubergine slices until golden brown.  Remove and drain well.

2)  In a bowl, beat the yogurt with the salt, pepper, coriander, and chopped chilli.  Add the aubergine or cucumber and garnish with ground roasted cumin and chilli powder.
