                               Raisin Rice

   2      Cups          Basmati Rice
   1      Teaspoon      Saffron Threads
   4      Tablespoons   Butter
  10      Whole         Cloves
   8      Whole         Green Cardamom Pods
   1      Stick         Cinnamon
     3/4  Cup           Raisins
   1 1/4  Teaspoons     Salt

1)  Wash the rice well and soak for 20 minutes.  Drain and reserve 4 cups of the soaking water.

2)  Crush the saffron threads and add 2 Tablespoons of water to them.

3)  Heat butter over medium heat.  Add the cardamom, cloves and cinnamon and fry until lightly browned and puffed.

4)  Add rice and fry for about 3 minutes.

5)  Add water, salt, saffron water and raisins.  Bring to a boil, reduce heat and simmer, partially covered, until the rice has steamy holes (about 10 minutes).

6)  Cover tightly and steam for an additional 10 minutes at lowest temperature.

7)  Turn off the heat and let rest on the burner for an additional 5 minutes.
