             Quick-Fried Shredded Beef with Ginger and Onions

 450      Grams         Beef Filet, Rump or Steak -- (1 pound)
   1      Teaspoon      Salt
                        Pepper,Black (to taste)
   1 1/2  Tablespoons   Corn Flour
   1                    Egg White,Raw
   3      Medium        Onions,Yellow
   3      Slices        Ginger,Fresh
   2      Teaspoons     Corn Flour
   2      Tablespoons   Water
   1 1/2  Tablespoons   Sherry,Dry
   3      Tablespoons   Stock or Water
   1      Tablespoon    Sugar
   2      Tablespoons   Soy Sauce
   4      Tablespoons   Vegetable Oil
  25      Grams         Lard -- (1 ounce)

1)  Cut the beef into very thin, match-sized shreds.  Sprinkle with the salt and pepper to taste.  Toss in the first amount of corn flour (1 1/2 Tablespoons) and then coat in the egg white.  Set aside.

2)  Peel and thinly slice the onions.  Shred the ginger.  Put together in a bowl.

3)  In a small bowl, mix together the soy sauce, sugar and stock.

4)  In another small bowl, mix the sherry, the 2 Tablespoons of water and remaining corn flour.

5)  Heat the oil in a frying pan.  When hot, stir-fry the beef over high heat for 1 1/2 minutes.  Remove and set aside.

6)  Add the lard to the pan.  When hot, stir-fry the onions and ginger until the onions are tender.

7)  Add the soy sauce, sugar and stock mixture and stir together for 30 seconds.

8)  Return the beef to the pan, add the sherry and corn flour mixture, and continue to stir-fry for 30 seconds.
