                              Prawns Fu-Yung

 100      Grams         Prawns,Shelled Weight -- (3 ounces)
   1      Slice         Ginger Root,Peeled and Minced
   1      Teaspoon      Cornflour
   6                    Eggs
   1      Teaspoon      Salt
   1                    Spring Onion,Finely Chopped
   3      Tablespoons   Oil
   1      Tablespoon    Sherry

1)  Wash the shelled prawns and dry them well on kitchen paper.

2)  Finely chop the ginger and mix it with the prawns and cornflour.

3)  Beat the eggs with the salt and the onion.

4)  Heat 1 Tablespoon of the oil in a frying pan and stir fry the prawns.  Add the sherry.

5)  Remove the prawns from the pan and mix them with the eggs.

6)  Clean the pan and heat the remaining 2 Tablespoons of oil.  Then pour in the egg mixture.  Stir to scramble for a few minutes and serve before the eggs set too hard.
