                               Prawn Curry

   2      Tablespoons   Vegetable Oil
   1      Large         Onion,Chopped Fine
   1      Clove         Garlic, Crushed with 1/2 tsp. salt
     1/2  Teaspoon      Turmeric
     1/2  Teaspoon      Mustard Seeds
   1      Tablespoon    Fresh Ginger,Minced
   1      Teaspoon      Chilli Powder
 400      Grams         Can of Tomatoes, Sieved -- (14 ounces)
 500      Grams         Peeled Prawns -- (18 ounces)
     1/2                Lemon,Juice of
 150      Grams         Yogurt -- (5 1/2 ounces)

1)  Heat the oil in a frying pan.  Add the onion and ginger and fry gently for 5 minutes or until golden.

2)  Add the garlic and spices and fry for 2 to 3 minutes.

3)  Add the sieved tomatoes and cook for 10 minutes.

4)  Add the prawns.  If using frozen prawns, just heat them through (cook for approx. 2 minutes).  If using uncooked prawns, cook gently for 10 to 15 minutes.

5)  Stir in the lemon juice and yogurt and heat through.

6)  Serve with boiled rice and cucumber raita.
