                              Potato Bhurta

 500      Grams         Potatoes -- (18 ounces)
 120      Grams         Butter -- (4 1/2 ounces)
   2                    Onions,Large
  60      Grams         Corriander Leaves -- (2 ounces)
   1                    Green Chili
   4                    Cloves
   4                    Cardamom Pods
     1/2  Teaspoon      Chili Powder
   1                    Lemon,Juice of
   1      Teaspoon      Salt

1)  Peel and cook the potatoes until soft.

2)  Mash the potatoes.  Chop the onions very fine.  Finely chop the chili. Chop the coriander leaves.  Shell the cardamom pods.  Mix half of the onions with the chili, coriander leaves, cardamom, cloves, chili powder, salt and the potatoes.

3)  Fry the remainder of the onions in the butter.  Add the potato mixture and cook for 10 to 15 minutes over a low flame.

4)  Mix in the lemon juice and serve.

NOTES : This is the best potato curry I have ever tasted!  I highly recommend it!
