                               Potato Salad

   8      Cups          Potatoes
   2      Cups          Celery,Finely Diced
   1      Cup           Green Onion,Finely Sliced
   1      Cup           Parsley,Fresh,Minced Fine
   1 1/2  Teaspoons     Salt
     1/4  Teaspoon      Pepper
     1/2  Cup           Salad Oil
   3      Tablespoons   Lemon Juice
     1/2  Teaspoon      Salt
          Dash          Paprika
     1/8  Teaspoon      Sugar
   1 1/2  Cups          Mayonnaise
   4 1/2  Teaspoons     Mustard,Yellow,Prepared
   3      Tablespoons   Lemon Juice,Fresh

1)  Cook and cool potatoes.  Peel them and dice them into bite-sized pieces.

2)  In a large bowl, mix the celery, green onions and parsley with 1 1/2 teaspoons of salt and 1/4 teaspoon pepper.

3)  Make a salad dressing from the salad oil, 3 T. of lemon juice, 1/2 tsp. salt, 1/8 tsp. sugar and dash paprika.  Mix these ingredients in a jar with a tight lid, shaking vigorously until well blended.  Pour this dressing over the greens in the bowl and let them marinate for at least 1/2 hour.

4)  Add the potatoes, toss well and chill.

5)  Mix the mayonnaise with the mustard and 3 T. lemon juice.  Pour this mixture over the chilled salad and mix well.
Salad will be very moist.

NOTES : This is the best potato salad in the world!  It is my mother's recipe.
