                   Potatoes and Cheese with White Sauce

   4      Medium        Potatoes
   2      Cups          Cheese
   1      Recipe        White Sauce:
   1      Tablespoon    Butter -- White Sauce
   1      Tablespoon    Flour -- White Sauce
     1/4  Teaspoon      Salt -- White Sauce
     1/8  Teaspoon      Pepper -- White Sauce
   1      Cup           Milk -- White Sauce

1)  Peel and thinly slice the potatoes.  Boil them in water to cover for 10-15 minutes or until they are fairly soft.

2)  Melt the butter over low heat.  Blend in the flour and stir until the mixture is smooth and bubbly.  Remove from heat.

3)  Stir in the milk, return the pan to the heat and bring to a boil.  Boil for 1 minute stirring constantly and continue cooking until thickened.

4)  Butter a casserole dish and layer the bottom of it with about 1/2 of the potatoes.  Cover the potatoes with a layer of cheese.  Put the remainder of the potatoes on top of the cheese and cover with white sauce.  Put another layer of cheese on top and brown in the oven 200° C (400° F) for 15 minutes.
