                             Plain Fried Rice

   1 1/2  Cups          Short or Medium-Grain Rice
   4      Tablespoons   Olive Oil
   1                    Onion,Chopped
 500      Milliliters   Chicken Stock,Heated -- (18 ounces)

1)  Wash the rice in several changes of water (until water is clear).  Soak for 1 hour in water to cover.  Then drain the rice.

2)  Heat the chicken stock.

3)  Saute the onions in the butter in a medium-sized sauce pan for about 5 minutes, stirring occasionally.

4)  Add the rice, stirring frequently to coat all of the rice in the butter for 2 to 3 minutes.

5)  Pour the hot stock over the rice and stir.  Cover partially with the lid of the pan and cook until steamy holes appear in the rice.  (Do not stir during this time).

6)  Reduce heat to the lowest setting, cover completely and cook for 10 minutes.

7)  Give the rice a stir and replace the lid.  Turn the heat off and allow the rice to steam for an additional 5 minutes.
