             Philippine Stir-Fried Glass Noodles (Sotanghon)

   1      Portion       Glass Noodles
   1                    Chicken Breast
 225      Grams         Pork Tenderloin
   1      Large         Onion, Chopped
   1      Clove         Garlic, Minced
                        Ground Black Pepper (to taste)
     1/2  Cup           Green Onions, Chopped
                        Fish Sauce (to taste)
                        Lemon Juice (to taste)

1)  Put the glass noodles into lukewarm water to soften them.

2)  In salted water, boil the chicken and pork until just cooked through but not overdone.

3)  Reserve the stock.

4)  Shred the meat and saute in vegetable oil with the chopped onions and minced garlic.

5)  Add freshly ground black pepper to taste.

6)  Add the broth and the strained noodles.  If there is a lot of broth, more than 1 litre, the dish can be served as a soup.

7)  Mix in the chopped green onions.

8)  Mix together some fish sauce and lemon juice and stir into the noodles.

9)  Serve.
