                 Pasta Salad with Tomatoes and Mozarella

 100      Grams         Fusilli Pasta,Tricolor/person -- (3 ounces)
   1      Large         Tomato/person (use only very ripe) -- (or 4 cherry toms.)
   1      Clove         Garlic -- sliced
 100      Grams         Mozarella (Santa Lucia)/person (3 ounces) -- chopped into cubes
                        Salt -- to taste
                        Pepper,Black -- to taste
                        Green Olive Oil
                        Red Wine or Balsamic Vinegar
                        Fresh Basil, Minced

1)  Heat salted water to boiling and cook fusilli until al dente.

2)  Wash and slice tomatoes and place them in a large serving bowl.  Add the minced basil and mix well.

3)  Heat a generous amount of green olive oil in a frying pan and saute the finely sliced garlic with some salt to taste for about two minutes.  When done, pour hot oil over tomatoes.

4)  Add vinegar to tomatoes/oil mixture in the proportion of 1/4 vinegar to 3/4 oil.  Salt and pepper to taste.

5)  Chop the mozarella into 1/2 inch cubes and add to tomatoes.

6)  Add hot pasta, toss well and serve.

Note:  For best results, steps 2-5 should be done 1/2 hour before adding the pasta.  This enhances the flavours.
