                        Party Sesame Baked Chicken

  24      Pieces        Chicken (~ 10 1/2 lbs.)
   2      Cups          Buttermilk
   1      Cup           Butter
     1/2  Teaspoon      Tarragon
   3      Tablespoons   Lemon Juice
   4      Cups          Bread Crumbs (very fine ones)
     1/4  Cup           Parsley, Minced, Fresh
     1/2  Cup           Sesame Seeds
   3      Teaspoons     Seasoned Salt

1)  Wash the chicken pieces and arrange them in a shallow 13 x 9 x 2 1/2 inch baking dish.  Pour the buttermilk over the pieces, cover tightly with cling film and refrigerate overnight.

2)  The next morning, pour off the buttermilk and pat the chicken dry with paper towels.  Discard the buttermilk.

3)  Melt the butter with the tarragon and add the lemon juice.

4)  Mix the bread crumbs with the parsley, sesame seeds and seasoned salt.  Mix well.

5)  Dip the chicken pieces in the butter mixture and roll in the crumbs to coat thoroughly.  Arrange on a large baking tray.  Spoon remaining butter over all the pieces.  Cover tightly and refrigerate until about 1 1/2 hours before dinner.

6)  Bake at 180° C (350° F) without turning until the chicken is golden and fork tender (about 1 1/2 hours).  Baste the chicken occasionally with the pan drippings.
