                                Onion Pie

   1      9-inch        Pie Crust
   1      Tablespoon    Flour
   2                    Eggs
   1      Cup           Sour Cream
     1/2  Teaspoon      Salt
     1/4  Teaspoon      Pepper
   4      Slices        Bacon (or 1/4 c. butter)
   2      Cups          Thinly Sliced Onions
     1/4  Cup           Parmesan, Grated
     1/4  Cup           Cheese, Grated (for top)

1)  Preheat oven to 200° C (400° F).

2)  Saute bacon just until clear.

3)  Drain most of the fat from the pan.

4)  Add the onions and saute until clear (do not brown them).  Set aside to cool.

5)  Beat the eggs and whip in the sour cream.  Stir in the flour, salt, pepper, and the 1/4 cup of Parmesan.

6)  Prick the bottom of the pie shell several times with a fork.  Spread the onions and bacon bits evenly in the crust.  Pour the egg and sour cream mixture over the onions and top with the grated cheese.

7)  Bake for 15 minutes (CONV 12), then turn the heat down to 180° C (350° F) and bake for another 15 minutes (CONV 12), or until the pie is nicely browned.

8)  Serve hot.
