                         Olives in Cheese Pastry

   1      Cup           Plain Flour
   1      Pinch         Cayenne Pepper
     1/8  Teaspoon      Salt
 100      Grams         Butter
 150      Grams         Tasty Cheese, Grated
  50      Small         Stuffed Green Olives
   1                    Egg, Lightly Beaten
                        Poppy Seeds

1)  Mix the flour, pepper, salt and butter until well combined.

2)  Add the cheese and mix until the dough becomes a ball.

3)  Knead dough on lightly floured surface until smooth.

4)  Cover and refrigerate dough for 30 minutes.

5)  Drain olives on absorbent paper.

6)  Roll pastry between sheets of waxed paper until 3 mm thick.  Cut 4 cm (~ 1 1/2 inches) rounds from the pastry, top each round with an olive, fold the pastry around each olive to enclose it and roll it into a ball.

7)  Dip the tops of the balls in egg, then in the poppy seeds.

8)  Place the balls onto a greased oven try, cover and refrigerate for 30 minutes.

9)  Bake at 200° C (400° F) for 12-15 minutes or until browned.  Cool.
