                             Oatmeal Muffins

   1      Cup           Oatmeal
   1      Cup           Buttermilk
     1/3  Cup           Shortening (Crisco)
     1/2  Cup           Brown Sugar,Packed
   1                    Egg
   1      Teaspoon      Baking Powder
     1/2  Teaspoon      Soda
   1      Teaspoon      Salt
   1      Cup           Flour

1)  Soak the oatmeal in the buttermilk for 1 hour.

2)  Mix together the shortening, brown sugar and egg.

3)  In a separate bowl, sift together the flour, baking powder, baking soda and salt.

4)  Add the oatmeal mixture alternately with the flour mixture to the shortening mixture.

5)  Put paper muffin (cupcake) liners in cupcake tins.  Fill 1/2 full and bake at 190° C (375° F) for 20 minutes.
