                            Nina's Cheese Cake

  10      inch          Graham Cracker Pie Shell
 340      Grams         Cream Cheese -- (12 ounces)
   2                    Eggs
     3/4  Cup           Sugar
   1      Teaspoon      Vanilla Extract
   2      Tablespoons   Lemon Juice
   1      Cup           Sour Cream
   3 1/2  Tablespoons   Sugar
   1      Teaspoon      Vanilla Extract

1)  Bake the crust for 5 minutes at 180° C (350° F). Crust should be firm and lightly browned.  Cool the pie shell.

2)  In a narrow bowl, beat the cream cheese until light.

3)  Beat the eggs and add them to the cream cheese.

4)  Add the sugar, vanilla and lemon juice.  Cream well and scrape bottom occasionally.  Mixture should be soft and fairly fluid.

5)  Pour into baked shell and bake 20 minutes at 180 C (350 F).  Cool for 5 minutes.

6)  Beat the sour cream with the sugar and vanilla and pour it over the top and edges of the crust to protect the crust from charring.  Bake the pie an additional 10 minutes.

7)  Place directly in the refrigerator and chill at least 5 hours before serving.
