                              Marian's Chili

   2      Tablespoons   Vegetable Oil
 300      Grams         Ground Beef,Lean -- (11 ounces)
   2      Large         Onions, Roughly Chopped
   2      Cloves        Garlic,Minced
   1 1/2  Tablespoons   Chili Powder, Hot
   1 1/2  Tablespoons   Chili Powder, Mild
     1/2  Teaspoon      Oregano
   2      Teaspoons     Ground Cumin
   1      Teaspoon      Salt
 800      Grams         Tomatoes,Canned (2 cans) -- (2 15-ounce cans)
 400      Grams         Red Kidney Beans,Drained and Rinsed -- (1 15-ounce can)
   1                    Bay Leaf
     1/4  Teaspoon      Cayenne Pepper

1)  In a skillet, brown the ground beef.

2)  In a separate large skillet, heat the oil and saute the onion and garlic until the onion is tender (3-5 minutes).

3)  Add the chili powders, oregano, cayenne pepper and salt and mix well.  Saute for about 1 minute.

4)  Add the tomatoes and bay leaf and mix well.

5)  Add the browned beef.  Turn the heat to low and simmer, covered, for at least 1/2 hour, stirring occasionally.

6)  Gently stir in the kidney beans and simmer for 15 minutes more, stirring occasionally.

NOTES : Garnishes:  Sour cream, Cheddar cheese, Jalapenos, Scallions
