                      Mushroom Sauce for Filet Steak

   1      Cup           Beef Stock
                        Black Pepper,Freshly Ground
   1      Tablespoon    Parsley,Fresh,Chopped
   2      Tablespoons   Cornflour
   1      Tablespoon    Butter
   1      Cup           Mushrooms,Fresh,Finely Sliced
   2      Tablespoons   Butter
     1/2  Cup           Hot Water
     1/2  Cup           Red Wine,Dry
   1                    Lemon,Fresh,Juice of

1)  Brown the cornflour in the butter.  Slowly add the beef stock and cook until the consistency of heavy cream.  Season with parsley and pepper and remove from heat.

2)  Saute the mushrooms in the butter.

3)  Add 1/2 cup hot water and simmer for 10 minutes.  Add the thickened stock and the red wine and simmer for 20 minutes.  Taste for seasonings.  Add the juice of the lemon.

4)  Serve over filet steak.
