                          Malay Noodle Stir-Fry

   1      Tablespoon    Corn,Peanut or Sesame Oil
   2      Cloves        Garlic,Sliced Thin
     1/2  Inch          Ginger,Fresh,Chopped Find
   1      Tablespoon    Onion,Sliced
     3/4  Teaspoon      Hot Red Chili Flakes,Dried
 240      Grams         Chicken Breast Filet -- (9 ounces)
   3      Tablespoons   Soy Sauce
     1/2  Teaspoon      Salt
   2      Cups          Chinese Cabbage,Shredded
 200      Grams         Rice Noodles,Dried -- (7 ounces)
     1/4  Cup           Celery Leaves,Chopped

1)  Put the rice noodles in a large pan and pour boiling water over them.  Allow them to soak for at least 10 minutes.

2)  Chop the garlic, ginger, onion and cabbage.  Cut the chicken into 1/2 inch cubes.

3)  Heat the oil in a wok and fry the garlic and ginger over moderate heat for 2 minutes.  Add the onion and chili and stir-fry for 1 minute.

4)  Add the chicken and stir-fry until the pink color is completely gone.  Add the soy sauce, salt, and cabbage, and stir-fry for 2 minutes.  Add the rice noodles and stir-fry for 3 minutes to mix well.

5)  Add the celery leaves, mix and serve.
