                                 Lime Pie

   1      Recipe        Graham Cracker Crust -- (use 9-inch plate)
   4                    Egg Yolks
   2 2/3  Cups          Milk
     3/4  Cup           Sugar
   3      Tablespoons   Corn Starch
   1      Teaspoon      Grated Lime Peel
     1/4  Teaspoon      Salt
     1/3  Cup           Lime Juice
   4                    Egg Whites -- Meringue
     1/4  Teaspoon      Cream of Tartar -- "
     1/2  Cup           Sugar -- "
   1 1/2  Teaspoons     Lime Juice -- "

1)  Prepare and cool thoroughly the graham cracker crust using a 9-inch plate.

2)  Combine egg yolks, milk, sugar, cornstarch, lime peel and salt in a blender.  Process until smooth.  Pour into a medium saucepan and cook and stir over medium heat until mixture boils, becomes very thick and separates when a spoon is drawn through it.

3)  Stir in the lime juice.  Cook and stir until mixture again becomes very thick.  Remove from heat and cool thoroughly.

4)  In a medium bowl, beat egg whites and cream of tartar until soft peaks form.  While beating, add one tablespoon of sugar at a time.  Beat until stiff.  Beat in lime juice.

5)  Turn cooled filling into the pie shell.  Swirl meringue onto pie, spreading to edges and sealing pie shell.  Bake 12 to 15 minutes at 180 C (350 F) until meringue is browned.

6)  Cool pie and chill before cutting.
