                              Lemon Squares

   1      Cup           Flour,All-Purpose
     1/2  Cup           Butter,Cold,Cut into bits
     1/4  Cup           Confectioners' Sugar
   2      Large         Eggs
     3/4  Cup           Granulated Sugar
   3      Tablespoons   Lemon Juice,Fresh
   2      Tablespoons   Flour,All-Purpose
     1/2  Teaspoon      Baking Powder
                        Confectioners' Sugar for Dusting

1)  In a bowl, blend together 1 cup of flour, the butter and 1/4 cup confectioners' sugar until the mixture resembles meal.

2)  Pat the mixture into an 8-inch-square baking pan and bake it in the middle of a preheated 180° C (350° F) oven for 12 to 15 minutes, or until it is pale golden.

3)  In another bowl with an electric mixer, beat the eggs until they are thick and pale.

4)  Beat in the granulated sugar and the lemon juice and beat the mixture for 8 minutes.

5)  Sift in the remaining 2 Tablespoons of flour and the baking powder, stir the mixture until it is combined well, and pour it over the baked layer.

6)  Bake the dessert in the middle of the oven for 15 to 20 minutes or until it is golden.  (Be careful not to burn).

7)  Remove from oven and sift some additional confectioners' sugar over the top.

8)  Cut the dessert into 2-inch squares.  Makes 16 squares.
