                               Lemon Sorbet

 300      Milliliters   Water -- (11 ounces)
 125      Milliliters   Lemon Juice,Fresh -- (4 1/2 ounces)
 125      Grams         Sugar -- (4 1/2 ounces)

1)  Prepare the sugar syrup - put the sugar and the water into a pan and simmer it carefully over low heat for 2 minutes.  Allow the syrup to cool to 20 C (72 F) before using it.

2)  Add the lemon juice to the cooled syrup and mix well.

3)  Turn on the ice cream machine and pour the lemon mixture through the hole in the top.  It should turn to sorbet in 30 to 40 minutes
