                         Korma Gosht (Meat Curry)

 450      Grams         Meat (Lamb or Beef), Cubed -- (1 pound)
   5      Cloves        Garlic,Peeled and Crushed
  15      Grams         Fresh Ginger Root,Peeled and Minced -- (1 Tablespoon)
  50      Grams         Ground Almonds -- (2 ounces)
   1      Teaspoon      Chili Powder
     1/2  Teaspoon      Ground Turmeric
   1 1/2  Teaspoons     Ground Cumin
   1 1/2  Teaspoons     Ground Coriander
     3/4  Teaspoon      Salt
 150      Milliliters   Yogurt,Plain -- (5 1/2 ounces)
 300      Milliliters   Water -- (11 ounces)
                        Chopped Chilli
                        Chopped Coriander Leaves

1)  Heat the oil in a large pan and fry the onion until light brown.  Add the bay leaves, cinnamon, peppercorns, cloves, small and large cardamoms, and continue frying for 30 seconds.

2)  Add the cubed meat and stir in the garlic, ginger, ground almonds, chilli powder, turmeric, cumin, coriander and salt.  Fry for about 7 minutes until the meat is fairly dry and the oil or ghee separates and rises to the surface.

3)  Stir in the yogurt and gently fry to remove the moisture.

4)  Add the water, cover and cook over a gentle heat for 40-45 minutes, or until the meat is tender.

5)  Garnish with coriander leaves, chilli, and edible silver leaf if available.
