                               Key Lime Pie

   1                    Graham Cracker Pie Crust, 9 Inch -- + 1 Tbsp. lime juice
   2      Cans          Sweetened Condensed Milk -- (~ 800 grams)
     2/3  Cup           Lime Juice
   3                    Eggs, Separated
     1/4  Cup           Sugar

1)  Prepare the graham cracker pie crust, adding 1 Tbsp. of lime juice to the ingredients.

2)  Beat together the egg yolks and condensed milk.  Add the lime juice and beat until smooth.  Pour this mixture into the baked crust.

3)  Beat the egg whites until stiff but not dry.  Add the sugar, beating constantly.  Swirl on top of the lime custard.

4)  Bake for 10 minutes at 150° C (300° F), then increast the heat to 180° C (350° F) and bake an additional 5 minutes.
