                        John Oakberg's BBQ'd Pork

   1 1/2  Kilograms     Schopfbraten with bone -- (3 lbs. Boston butt)

          Oil           Skimmed from BBQ Sauce

1)  Cook the meat in a covered grill on low to medium heat.  Allow about 1 hour cooking time per kilo (30 minutes per pound), or until the meat separates easily from the bone.  Turn every 30 minutes, basting lightly with the oil before and after turning.

2)  During the last hour, cook with the bone side down.

3)  For the last 30 minutes, baste heavily with the BBQ sauce every 10 minutes.

4)  After cooking, allow the meat to stand for about 1 hour, then remove the meat from the bone, chopping and mixing the outer layer with all the rest (use your hands).  Serve with the remainder of the BBQ sauce.
