                           Japanese White Rice

 400      Grams         Short or Medium Grain Rice -- (14 ounces)
 475      Milliliters   Water -- (17 ounces)

1)  One hour before cooking, wash rice and soak it for one hour in the water in the pan in which it will be cooked.

2)  Cover pan and bring to a boil over high heat.  Reduce heat to very low and simmer 8-10 minutes.

3)  Turn off the heat and leave the pan on the cooker for another 15 minutes to steam.
