                         Hungarian Mushroom Soup

 340      Grams         Mushrooms,Fresh,Sliced -- (12 ounces)
   2      Cups          Onion,Chopped
   4      Tablespoons   Butter
   3      Tablespoons   Flour + 3 Tablespoons Butter
   1 1/2  Cups          Milk
   1 1/2  Teaspoons     Dill Weed (1 to 2 teaspoons)
   1      Tablespoon    Hungarian Paprika (or more to taste)
   1      Tablespoon    Soy Sauce
   1      Teaspoon      Salt
   2      Cups          Stock or Water
   2      Teaspoons     Lemon Juice,Fresh
     1/4  Cup           Parsley,Fresh,Chopped
                        Black Pepper,Freshly Ground, to taste
     1/2  Cup           Sour Cream or Yogurt

1)  Saute the onions in the butter.  Salt lightly.

2)  A few minutes later, add the mushrooms, 1 teaspoon of the dill, 1/2 cup stock or water, the soy sauce and paprika. Cover and simmer for 15 minutes.

3)  Melt the remaining butter in a large saucepan.  Whisk in the flour and cook, whisking, a few minutes.  Gradually add milk, stirring constantly.  Cook, stirring frequently, over low heat about 10 minutes - until thick.

4)  Stir in mushroom mixture and remaining stock.  Cover and simmer 10 to 15 minutes.  Just before serving, add salt, pepper, lemon juice, sour cream and, if desired, extra dill.

5)  Serve garnished with parsley.
