                            Hollandaise Sauce

   3                    Egg Yolks
   2      Tablespoons   Lemon Juice,Fresh
     1/2  Cup           Butter,Melted
   2      Tablespoons   Hot Water
     1/4  Teaspoon      Salt
                        Cayenne Pepper (to taste)

1)  In a small saucepan, beat the egg yolks until smooth.  Stir in the lemon juice, the melted butter, the hot water, salt and cayenne and mix well.

2)  Cook over low heat stirring constantly until thickened (about 5 minutes).
