                               Fruit Scones

 225      Grams         Plain Flour -- (1 cup)
     1/2  Teaspoon      Salt
     1/2  Teaspoon      Bicarbonate of Soda
   1      Teaspoon      Cream of Tartar
  40      Grams         Butter -- (1 1/2 ounces)
  25      Grams         Caster Sugar -- (1 ounce)
  40      Grams         Sultanas or Currants -- (1 1/2 ounces)
 150      Milliliters   Milk -- (5 1/2 ounces)

1)  Sieve together the flour, salt, soda and cream of tartar into a bowl.

2)  Rub in the margarine.

3)  Add the sugar and sultanas.

4)  Mix to a soft but not sticky dough with as much milk as necessary.  Knead lightly until smooth.

5)  Roll out just over 1/2 inch thick and cut into 2 1/2 inch rounds.

6)  Bake on greased tray above the center of the oven at 220° C (425° F) for about 12 minutes.
