                         Fresh Fruit with Yogurt

   1                    Orange (grate peel, then juice)
   2                    Lemon Yogurts
   4      Tablespoons   Whipping Cream
   4      Tablespoons   Apricot Preserves
     1/8  Teaspoon      Almond Extract
   2                    Bananas
     1/2                Pineapple
                        Cereal or Granola (OPTIONAL) -- Decoration
                        Melon Slices -- Decoration
     1/2  Basket        Raspberries -- Decoration

1)  Chop cantelope, apples, pears, grapes, kiwis and strawberries into bite-sized pieces.  Add orange zest and juice of an orange and mix well.  Put fruit into a colander and cover with plastic wrap.

2)  Prepare the dressing.  Mix the yogurt with the cream, apricot preserves and almond extract.  Let stand for at least 1 hour or up to 3 days.

3)  Just before serving, chop the bananas and pineapple into bite-sized pieces.  Put into a serving bowl with the fruit mixture from the colander and mix well.

4)  Pour the yogurt dressing over the top.

5)  You can sprinkle the salad with your favourite cereal or granola.

6)  Decorate with melon slices and 1/2 basket of raspberries.
