                        Elegant Chocolate Frosting

   1 1/4  Cups          Sugar
   1      Cup           Evaporated Milk or Heavy Cream
   5      Ounces        Baker's Unsweetened Chocolate
     1/4  Cup           Butter
   1      Teaspoon      Vanilla

1)  Combine sugar and milk in a heavy saucepan.  Bring to a boil, stirring constantly.  Reduce the heat and simmer for 6 minutes without stirring.  Remove from heat.

2)  Add the chocolate and stir to blend.

3)  Stir in the butter and vanilla.

4)  Chill the mixture until it begins to thicken.  Then beat it until it is thick and creamy.

NOTES : Makes enough to fill and frost an 8- or 9-inch layer cake.
