                         Egg Nog - Classic Cooked

   6                    Eggs
     1/4  Cup           Sugar
     1/4  Teaspoon      Salt (optional)
   1      Liter         Milk -- (1 quart)
   1      Teaspoon      Vanilla
                        Optional stir-ins or garnishes

1)  In a large saucepan, beat together the eggs, sugar and salt.  Stir in 2 cups of the milk.  Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon and reaches 160° F.

2)  Remove from the heat and stir in the remaining 2 cups of milk and the vanilla.  Cover and refrigerate until thoroughly chilled, several hours or overnight.

3)  Just before serving, pour into a bowl or pitcher.  Add any stir-ins and/or garnishes and serve immediately.

Optional Stir-Ins and Garnishes:  (choose one or more)

-   Whipped heavy cream (up to 3 cups)
-   Rum, brandy, whiskey, cognac (up to 1 cup, or to taste)
-   Chocolate curls
-   Cinnamon sticks
-   Extracts or flavourings
-   Ground nutmeg
-   Ice cream or sherbet
