                    Diced Chicken with Crushed Peanuts

 225      Grams         Chicken Breast Filet, Skinned -- (8 ounces)
     1/2  Teaspoon      Salt
   1                    Egg White
   2      Teaspoons     Cornflour
  60      Grams         Roasted Peanuts (shelled weight) -- (2 ounces)
   2                    Spring Onions
   3                    Dried Red Chilis,Soaked in Water
   3      Tablespoons   Oil (2 Tbsp. Hot Chili + 1 Tbsp.Sesame)
   1      Tablespoon    Sugar
   2      Tablespoons   Rice Wine Vinegar
   1 1/2  Teaspoons     Cornflour
   2      Tablespoons   Water
   2      Tablespoons   Soy Sauce
   2      Cloves        Garlic

1)  Dice the chicken into small cubes not much bigger than a peanut.  Mix with salt, egg white and cornflour and set aside.

2)  Crush or finely chop the peanuts.

3)  Cut the spring onions into short lengths.

4)  Finely chop the soaked red chilis.

5)  Mix together the sugar, vinegar, soy sauce, cornflour and water in a bowl.

6)  Heat the oil in a frying pan and stir-fry the chicken until lightly colored, then remove with a slotted spoon.

7)  Stir fry the garlic until golden.

8)  Toss the spring onions and chilis into the pan, stir a few times, add the crushed peanuts, diced chicken and the sauce mixture and blend well.

9)  Serve as soon as the sauce thickens.  Serve with Japanese Rice (see recipe).
