                                Dal Be-Aab

 300      Grams         Urad Dal (White Split Gram Bean) -- (11 ounces)
   1      Teaspoon      Turmeric
   1      Teaspoon      Red Chilli Powder
                        Salt
   1 3/4  Teaspoons     Cumin Seeds
     2/3  Cup           Onions
   6                    Green Chillies
   1      Tablespoon    Ginger
   2      Teaspoons     Garam Masala
     1/2  Cup           Tomatoes
   2      Tablespoons   Coriander,Fresh,Chopped
     1/4  Cup           Lemon Juice,Fresh
   1      Clove         Garlic
 150      Grams         Butter -- (5 ounces)

1)  Carefully pick through the dal to remove any rubbish.  Wash it in running water.

2)  Put 1.6 litres of water into a pot, along with the dal, turmeric, chilli powder and salt and put the pan over medium heat, simmering until dal is cooked (about 10-15 minutes).  Drain it.

3)  Peel, and slice the onions.  Deseed the green chillies and cut them into 1/4 inch pieces.

4)  Peel and cut the ginger into juliennes.

5)  Wash and chop the tomatoes.

6)  Wash and chop the coriander.

7)  Melt two-thirds of the butter in a large pan.  Add the cumin and saute over medium heat until the cumin begins to crackle.

8)  Add the onions, green chillies and ginger and saute until the onions are light brown.

9)  Add the garlic and saute for two more minutes.

10)  Add the dal, reduce the heat to low and stir for 2-3 minutes.

11)  Add the garam masala, tomatoes, coriander and lemon juice and cook for 1 minute more.

12)  Salt to taste.  Add the remaining butter, stir and serve.
