 500      Grams         Beef,Freshly Ground,Lean -- (17 ounces)
1500      Grams         Pork,Freshly Ground -- (3 pounds, 5 ounces)
 500      Grams         Pork Fat,Ground -- (17 ounces)
   6      Tablespoons   Sage,Ground
   1      Tablespoon    Red Pepper,Ground
   2      Tablespoons   Salt
   4      Tablespoons   Black Pepper,Ground
   1      Tablespoon    Marjoram
   2      Teaspoons     Mace

1)  Mix the meats well, or have them ground together, and spread them 3/4 inches thick on a countertop.

2)  Sprinkle with about 1/3 of the spices and knead the spices into the meat.  Repeat until all spices are used.

3)  Form the meat into rolls, wrap in plastic wrap and let stand in the refrigerator for 24 hours before using or freezing.

Note:  The spices are approximate amounts and may be increased or decreased as desired.  Selesta says she just gets out the spices and sprinkles "until it smells good".
