                                 Crumpets

   2      Teaspoons     Yeast,Active,Dry
   2      Teaspoons     Caster Sugar
 600      Milliliters   Scalded Milk,Cooled to Lukewarm -- (21 ounces)
 450      Grams         Flour,All-Purpose -- (16 ounces)
   1      Teaspoon      Salt
   1                    Egg,Beaten
  50      Grams         Butter,Melted -- (2 ounces)
   1      Tablespoon    Vegetable Oil, for Frying

1)  Stir sugar into 1/2 of the milk and sprinkle yeast on top. Stir well and set in a warm place for 20 minutes until bubbly and frothy.

2)  Sift flour and salt into a bowl.  Make a well in the middle and pour in yeast mixture, remaining warm milk, egg, butter and oil.

3)  Cover and leave to rise in a warm place for 1 hour (until doubled).

4)  Head a heavy frying pan over moderate heat and brush with a little oil.  Brush oil around the inside of metal crumpet molds or plain pastry cutters.  Place rings on the frying pan.

5)  pour batter into molds halfway up the sides and cook for 5 minutes or until surface is covered with bubbles.  Lift off and transfer to a wire rack to cool.

6)  Toast crumpets in a toaster until both sides are golden brown.
